No Bake Cookie Protein Bars


Breakfast today!

Yes, these have butter and sugar in them. Don't kill me yet. And yes, they are the best protein bars I have ever had to date. My own ingenious mixture of everyone's favorite no-bake cookie recipe and a healthy protein bar recipe. And they have 14 grams of protein per serving!



No Bake Cookie Protein Bars - 10 servings
1/2 cup butter
1 cup sugar
1/2 cup milk
4 tbsp good cocoa
2 tsp instant espresso powder

1/2 cup peanut butter
4 scoops chocolate whey protein powder
3 cups quick oats
1 tsp vanilla extract
4 tbsp ground flaxseed meal

Combine first 5 ingredients in a large saucepan. Bring to a rolling boil and boil 1-2 minutes. Get a 9x13 pan and put a sheet of wax paper in the bottom. Add the rest of the ingredients to the mixture in the saucepan. Scoop into the 9x13 pan and press down with a piece of wax paper (it may get sticky and stick to your hand). Refrigerate a few hours to set. Cut into 10 bars (you can be OCD and weigh them like I did to get them all exactly the same size, or not). Wrap individually in plastic wrap and keep in the fridge for a quick and delicious breakfast on the go!
