Orange-Pineapple Bread



This is one of my favorite quick breads. It is unique because you use the ENTIRE orange in it and you don't have to use a zester! It have a wonderful citrus flavor and is moist and very delicious. I changed the original recipe to include whole wheat flour, cut the oil in half and substituted applesauce, and skipped the nuts. You can see the original recipe here. I did add 4 scoops of unflavored protein powder, since I will be having it for breakfast. I have added dried cranberries before, and that is very yummy too!

Orange-Pineapple Bread

Ingredients:
    • 1 whole orange
    • 3 eggs
    • 2 cups sugar
    • 1/2 cup oil
    • 1/2 cup applesauce
    • 2 cups all-purpose flour
    • 1 cup whte whole wheat flour
    • 1/2 teaspoon salt
    • 1/2 teaspoon baking powder
    • 1 teaspoon baking soda
    • 1/4 teaspoon cinnamon
    • 1 can crushed pineapple, drained
Directions:

Cut orange into quarters, do not peel, remove seeds if any. Chop orange in blender or processor. Beat eggs, add sugar,orange and oil. Add dry ingredients and mix well. Stir in pineapple.

Spray 2 (9x5) loaf pans with Pam and pour in batter.

Bake for 1 hour at 325 degrees or until done.

6.1 grams of protein and 207 calories per serving (24 servings total - 12 slices each loaf).
